Menu & wines

Five courses, five fine wines

Rhône Valley Fine Wine Dinner at La Scène, Mercure Hibiya
  1. Aperitif

    French Bread with butter

Sparkling Rosé, La Rose, Bio, Jaillance

Gamay and White & Red Muscat

An organic sparkling wine with aromas of white and red small-grain muscat for sunny aperitifs. Small-grain white muscat gives it power and fruity aromas, while the Gamay gives it lightness and freshness. “La Rosé” is vinified using the natural ancestral method and without addition, which preserves the aromas and freshness of the grapes.

  2. Amuse

Pan-Fried Cod, Mont-Saint-Michel Mussels Marinière, Colorful Petite Vegetables, Brussels Sprouts, Pommes Paille

Crozes-Hermitage white, Les Terres Blanches, Domaine Belle, 2024

    Marsanne and Roussanne

A focused and vibrant expression of lush orchard fruit, this white blend balances a weighty, creamy texture with crisp mineral tension and a subtle floral lift.

  3. Starter

Shingen Chicken Leg and Sweet Chestnut Mosaic Terrine, Spice Marinated Free Range Soft Boiled Egg, Mushroom Velouté, Marinated Tuile and Mixed Sprout Salad

IGP Collines Rhodaniennes La Petite Syrah, 2022, Maison Belle

    100% Syrah

A delightfully pure and energetic expression of the varietal, bursting with fresh red berry flavors, floral undertones, and a delicate touch of cracked pepper.

  4. Main

Beef tenderloin au jus, Sweet Potato and Bacon Écrasé, Brussels Sprouts, Orange Flavored Anchovy Butter

    Châteauneuf-du-Pape, Domaine Juliette Avril, 2024

    Grenache, Syrah, and Mourvèdre

This wine delivers a dense, structured, and fruit-driven Châteauneuf-du-Pape that balances rich spice with attractive, well-knit concentration.

  5. Dessert

Tonka Bean Parfait, Fig, Caramelized Nuts

Clairette de Die Tradition Jaillance, AOC

80% Muscat à petits grains and 20% Clairette

The most daring of French AOC bubbly wines. It offers a refined sweetness with fruity aromas of Muscat and citrus, alongside flavors reminiscent of rose and lychee. With a low alcohol content of 8%, it is easy to drink and pairs beautifully with desserts.

  6. To finish

Coffee or tea and Petits Fours
